Birthday Dinner - with Icewine

It was my husband's birthday today so a week or so ago, I asked him what he'd like me to make for his special dinner. He picked a couple of recipes from our well-used copy of Anna & Michael Olson's "Cook at Home." From the "Romance" (!) chapter, Stan chose Pork Tenderloin Medallions with Madeira Pan Juices and Butternut Squash Purée. Both very simple, elegant and delicious recipes.

Inspired by Chardonnay

In honour of #CanadianWineDay today, we planned to open a bottle of Southbrook Vineyards 2011 Whimsy! “Sirugue” Chardonnay to have with dinner. But what to make for dinner to do this wine justice? With a couple of half-pieces of leftover pork tenderloin in the fridge, I figured we had more than enough for a dinner for two. I love fennel with pork, so wanted to incorporate that.
